    Chef, I’m a vegan. What could I do in place of the 2 eggs?

    Austin, pasta can definitely be made without eggs – it often is in southern Italy! You’ll have to add extra water to get the dough to hold itself together, probably around 1/4 cup total depending on the humidity. And allow the dough to rest for at least 30 minutes before shaping. Come on over and we’ll make some!
